Originating in the Basque town of San Sebastian and popular in Japan, burnt cheesecakes are cooked at very high heat to create a caramelized top with a creamy custardy center.

Until now, I only liked NY style cheesecake but I must say their burnt cheesecake is out of this world blows away every other cheesecake I've ever had.
Burnt and cooked at high heat
High heat gives the cheesecake its characteristic burnt exterior and a custard-like interior. The bitterness of the caramelized top and the light creamy center complement each other perfectly.
Fresh Local Milk
We use milk fresh from Battenkill Valley Creamery, a family farm in Salem, New York. We have personally visited the farm and can guarantee they do not use pesticides, insecticides, or artificial growth hormones.
